A ribbon cutting ceremony held May 1 officially welcomed Two Seeds Popcorn to the Hastings business community, marking the shop’s continued growth following its grand opening earlier this spring.
Located at 2137 Vermillion Street, Two Seeds Popcorn is owned by a father and daughter team, Allison Spakow and Gary Beskau. The business relocated to Hastings after previously operating in Apple Valley, where it first established its customer base before moving due to rising lease costs.
The shop specializes in small batch, handcrafted popcorn, offering more than 40 flavors that range from classic varieties to premium and gourmet options. Production takes place on site, allowing for fresh, consistent batches made throughout the day. In addition to packaged selections, customers can also order freshly prepared buttery popcorn customized to their taste.
Beyond popcorn, the store features hard ice cream and malts, adding to its appeal as a stop for both snacks and desserts. The ice cream offerings are designed to complement the shop’s nostalgic feel, with options available for individual servings or take home containers.
Two Seeds Popcorn also provides a wide range of custom services, including gift boxes, tins, and themed packaging for holidays, weddings, graduations, and corporate events. The business handles bulk orders and shipping, allowing it to serve both local customers and those outside the area. Seasonal demand plays a significant role, particularly during the holiday months when large corporate and specialty orders increase.
The move into the Hastings location followed several months of renovation and preparation after the building was purchased in August. The new space allows for expanded production, retail display, and customer service, supporting both walk in traffic and larger scale orders.
The May 1 ribbon cutting served as a formal introduction of the business to the community, bringing together local leaders, residents, and visitors. The event highlighted the shop’s focus on handcrafted products, family ownership, and its role as a new addition to the city’s small business landscape.
Two Seeds Popcorn is currently open Sundays and Mondays from noon to 5 p.m., and Tuesday through Saturday from 11 a.m. to 7 p.m., with extended hours planned through the summer season.
