Two Seeds Popcorn opens this week

A new family-run popcorn shop will open its doors in Hastings on April 2 at 11 a.m. bringing more than 40 flavors of small batch treats, old fashioned hard ice cream, and a father and daughter team excited to settle into their new space on Vermillion Street.

Two Seeds Popcorn, located at 2137 Vermillion Street, is owned by Allison Spakow and her father, Gary Beskau. The pair purchased the business in 2023 after it had previously operated in Apple Valley, then moved it to Hastings following a rent increase at the earlier location.

For Spakow, the opportunity came at the right time.

“My best friend and her sister’s stepdad owns Tom's popcorn in South Minneapolis,” she said. “And she's like, Allison, we're thinking about selling this place. And I'm like, what?”

Around the same time, Beskau had recently stepped away from the family trucking business after decades in the industry. The timing made the partnership feel natural.

“My mom works from home,” Spakow said. “And I had said, well, Katie and Molly are selling the popcorn shop. Maybe something? My mom said that's a great idea. Get your dad out of the house.”

The business kept its original name, which carries a personal meaning that still fits today.

“The reason they named it two seeds is because they were the two seeds,” Spakow said. “And then we just kept the name two seeds because we're the two new seeds.”

Inside the shop, customers will find shelves stocked with gourmet popcorn made in small batches rather than in large facilities. That handmade approach is central to what the owners believe sets them apart.

“So, we have all of our popcorn is gourmet. It's small batch, handmade, not made in a big facility, as for other popcorn companies,” Spakow said. “So that's where we feel like we stand out with our popcorn.”

The shop also serves hard ice cream and malts, a detail that has sparked a sense of nostalgia for many visitors.

“A lot of times that people say they can never find this anywhere, all of it reminds them of is driving up north as a kid and getting the hard ice cream,” she said.

Among the many popcorn options, one classic remains a customer favorite.

“That is our most one of our most popular sellers is the buttery white people come in on a weekly, or twice a week basis for their popcorn,” Spakow said.

Customers can also expect custom gift options, wedding popcorn bars, graduation treats, and corporate orders. The business ships popcorn and prepares themed packages for events throughout the year. Holiday demand alone makes up a large share of annual sales.

“30% of our sales are October through December,” Spakow said.

The move to Hastings followed months of remodeling work after the family purchased the building in August and prepared it for opening.

“A very long, very busy process,” Spakow said.

For Beskau, the shift from trucking to popcorn has been a welcome change of pace after decades of responsibility in transportation.

“Well, you know, truck is trucking. And you know, we did it such a long time, since 1957,” he said. “I retired three years ago, and did I think I’d end up here? Not at all.”

Now, instead of worrying about trucks on the road, he is focused on building something new with his daughter and welcoming customers through the door.

With more than 40 flavors available, customizable orders, and a steady stream of familiar favorites, the shop is already settling into the community, one bag at a time.

Two Seeds Popcorn is currently open Sundays and Mondays from noon to 5 p.m., and Tuesday through Saturday from 11 a.m. to 7 p.m., with extended hours planned beginning Memorial Day weekend, when the shop expects to stay open until 8 p.m. on its evening schedule.
